Thought I'd share this site I just found on a search. I'm converting a recipe from Cooking Light to GF and needed to know how much Xanthan gum to use. Can't wait to get baking tonight!

glutenfreegirl.com has a lot of really great recipes (and he bakes by weight not cups so her recipes often are sans xanthan which is fantastic).
Easy Gluten Free Baking by Elizabeth Barbone is my favorite cook book ever. I LOVE the bread recipes, I eat them UNTOASTED, they're THAT delicious.
What I've learned while baking GF:
1. Don't be afraid of using a lot of flours in a recipe
2. Avoid "All Purpose" GF flour it makes everything taste like death.

I love glutenfreebetty.com! She is amazing, although I warn you there are a lot of treats here...so use sparingly! But I would cook alot of her recipes for anyone, GF or not, they are so awesome. Red velvet whoopie pies, cinnabon cake, chocolate sheet cake, banana cake, impossible pumpkin pie... I have been happy with everything I've tried from her website.0

I just made a batch of gluten free peppermint bark fudge, used tapioca flour and guar gum instead of wheat flour, but then I found out the candy canes, of all things, "may contain wheat". Bah! We can still eat it, but I wanted some safe treats on hand for when certain friends come over. Back to the drawing board...0
