A new Monday

While I was getting my lunch ready yesterday, I actually remembered that today was meatless Monday so I was prepared this time. Eggs, an apple and oj for breakfast, a salad with a bean & grain burger pattie cut up on it and another bean & grain pattie on a bun with tomatoes and lettuce for dinner.

    I almost messed it up this morning. I had the turkey bacon cooking, and then something snapped in my head and realized I couldn't have that. I put it in the fridge for tomorrow and had my english muffin without the turkey bacon and already figured out lunch and dinner for today!

    Good for you on remembering ahead of time!

    I remembered....it looks like beans and rice tonight...I need to get more creative on a budget.

    Excited to be a part of this group!!!!!!!!!!!! Besides just eating healthier and exercising more, I really want to start paying attention to how foods make me feel- which foods fill me up, which foods make me sleepy etc!

    Thanks for the invite to this group. Looking forward to it. I am really openminded to trying new things. I am not a vegetarian or vegan but I do not eat red meat.

    It's my first Meatless Monday! Yay!!! Omelette for breakfast, lentil chili for lunch, greek yogurt, peanut butter and banana for snack, tofu and quinoa salad for dinner :)
