Chia Seeds? Anybody else use them in GF cooking?

I use Chia seeds in my oatmeal to up the fiber and get Omega's. Does any one else use them?

    I've seen recipes using them as egg subs.. but personally I have not played with them since i was a child and had a chia pet

    I recently used them as a egg substitute. It worked pretty good. We like to sprinkle them on our cereal.

    Just got them for the first time. I'm going to try a pudding recipe I saw on a raw site last night.

    I use them in the occasional green smoothie. It thickens the consistency.

    Super Easy - About 1/4 cup of chia, and Coconut or almond milk - start with double so 1/2 cup, stir with fork about 5 min - and add more milk, stir, let absorb and add more milk until desired consistancy. I think I finally end up with about 1 1/2 cups of milk to 1/4 cup of seeds. I add in honey and cinnamon for the kids into it. It's kind of like a tapicoa, but with a bit more texture that has a little harder texture to it. A friend sent it to me online, but the qty yeilded a lot more. Make sure you use a larger bowl - so for 1/4 cup, I use my small mixing bowl. Letting it sit overnight once you have the consistancy softer helps too.

    I've had them in a chia chocolate pudding before. I didn't really... love... it, per se. It was alright though.
