Hi all,
Figured this could be an interesting way to start sharing organic recipes. Post your favorite, and post more than one! Let's build lots of different options!
I will start:
Organic Vegetable Fajitas (all ingredients organic of course!) Serves 8
-1 Medium Onion - Sliced
-2 Medium Bell Peppers (one red/one green brings nice color) - Sliced
-2 Medium Yellow Squash, sliced thin
-2 Medium Zucchini, Sliced thin
-Olive Oil, 3 Tbsp
-Ground Cumin, 1 Tbsp
-Sea Salt
-All Seasons Salt
-Pure Ground Black Pepper
-Tortilla, Whole Wheat
-Hummus (used as spread for tortilla)
-LARGE Pan
Cook It
-Start with sauteing onions in a large pan with a little oil. Once onions lightly brown, add rest of vegetables and season to taste with cumin, salts, and pepper. Cook the rest of vegetables, stirring often until half way cooked. Drain excess water from pan, return to heat. Refresh seasonings and cook to complete. Spread hummus on tortilla's and scoop veggies on.
Refridge extras!
What I like most about this simple recipe is that it makes a lot of food for a little effort. It's all fresh, and fairly inexpensive. You can switch out veggies to your liking, or cut back on the amount to make a smaller serving size. I use hummus instead of cheese, but you can substitute it for cheese as well! So many creative options with Veggie fajitas!

I will post what I had for dinner tonight...
Organic Vegetable Shepards Pie
I started with a pot of water for the mashed potato (potato, sweet potato, parsnip)
mashed with a bit of
whole milk (or alternative) and butter
salt
pepper
garlic
powder
and a scoop of yogurt for some extra creamy
then on to the inside a stir fry vegi mix with tofu
first heat a tbs non conola oil in a pan and fry small cube tofu till golden brown then add:
onion
carrots
broccoli
cauliflower and cook a bit before adding-
kale
chard
garlic
in that order
do not over cook
spread in deep cassarole dish
The Gravy
1/4 c Nutritional/brewers yeast
1/4 c whole wheat flour (or any other)
toast tell lightly brown and fragrant
whisk in 1/4 c oil of choice (grape seed or olive)
stir constantly until golden brown
whisk in 1 1/2 water or vegi stock
stir until thick season with salt, pepper and tamari
pour over tofu and vegis
add mash on top spread evenly and fully cover vegis
sprinkle shredded cheese on top if desired
bake for 20-30 on 350
enjoy
lots of easy variations depending on the vegis available from the fridge and what not
my kids and his friends love it even packed with tons of kale and chard0 -
Rice noodle lasagna. I don't make it, get it from "iku" in Australia.
The sauce has tomato and pumpkin with miso for flavour. Sheets of asian rice noodles replace lasagne sheets and it has spinach too. May sound strange but so tasty.
Oh and who's into black sesame paste? (black tahini)
I was brought up in an organic household, my mum was an organic caterer so I've got organic recipes coming out of my ears.. where to start. Haha0 -
To add: if I had followed my mum's organic diet I probably wouldn't be here hehe.0
