Anyone have a (vension) jerky recipe with lower sodium? I love salt, but it does not love me.

I've not searched for one, I'd prefer to use a tried and true recipe if anyone has one.

    I would love the same, plus a recipe for sausage with lower sodium.:love:

    I use low-sodium soy sauce and Worcesterhire sauce instead of salt. You could substitute water of homemade broth for some of the liquid for marinating to keep sodium down.

    1 1/2 to 2 pounds meat of your choice
    2/3 cup Worcestershire sauce
    2/3 cup soy sauce
    1 tablespoon honey
    2 teaspoons freshly ground black pepper
    2 teaspoons onion powder
    1 teaspoon liquid smoke
    1 teaspoon red pepper flakes

    I tend to double the honey and triple the red pepper because I like it spicy. I made a double batch last night and my employees have eaten about 2 lbs of it today...I'd say that is tried and true.
