Grain and Gluten Free Gingerbread Men

Feeling a little down that just a few Gluten Free pretzels and shortbreads (out of a box from Walmart, my mom - daughter's grandmother bought them to make sure she didn't feel left out at Thanksgiving) were enough to wreck havoc on my daughter's immune system. She's became ill on the way home from our beautiful Thanksgiving Vacation and we're both finally almost over it, 3 weeks later.
Wanting to stay and be well for Christmas, I was thinking about stuffing her stocking with bacon when I came across this recipe at Nourished Kitchen.
Each of the ingredients is one my daughter thrives on. I can't wait to make these with her on Christmas Eve!

I can't have almonds or dates, but this is the grain-free gingerbread cookie that I am going to try:

thanks for the recipe .. I may make some of these for my gluten free kiddies too.. glad you all are feeling better.. that stinks that one wrong food can make you sick for weeks.0
