Vegan Chocolate Chip Banana Muffins

Made these last night by veganizing a muffin recipe I had used previously. They came out perfectly and super delicious.
Banana Chocolate Chip Muffins, 1 serving

Chocolate Chip Banana Muffins
Ingredients:
2 c. rolled oats
2 c. unsweetened soy milk
1 c. unsweetened applesauce
1 small banana mashed
2 c. all purpose flour
1 c. brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 c. mini dairy free chocolate chips (Enjoy Life brand)
Directions:
Preheat oven to 360 (Yes, 360). Grease a muffin tin liberally.
Soak the rolled oats in the soy milk for 5 minutes. Mix the dry ingredients (flour, sugar, baking powder & soda, salt) together really well. Make sure there are no lumps in the brown sugar. Add the apple sauce and banana to the oats and milk. Stir to combine. Slowly incorporate dry ingredients into the wet, careful not to over stir. Mix in chocolate chips.
Fill muffin tins nearly full and bake for about 20 minutes until a toothpick inserted in the middle comes out clean. Let cool in the tin for 5-10 minutes before loosening sides with a butter knife and transferring to a cooling rack to cool completely. Makes 15 HUGE muffins.
