Good Morning!
How's everyone doing? How about sharing some fruits and veggies recipes that help you to get in your servings or that are just plain yummy. I'll add one or two later today. (Gotta work now... shhhhhhh)

Today's intake:
Fruit - 1 cup blueberries
Veggies - 1 cup baby spinach, 4 slices tomato, 0.4 cucumber, 0.25 onion, and 20 green beans
I love stir fry! For me, its the easiest way to get in my servings of veggies without even trying. Usually I throw in green/red bell peppers, onion, broccoli, and cut green beans! I'll grill up some chicken to eat with it, too, but its fast, easy, and a totally delicious way to sneak in those veggies.0 -
I have 2 new recipes I tried this week from Eating well that have a good amount of vegetables and are tasty and filling too!

I have been using this as the main course and serving it with a salad. I made it with plain jack cheese instead of the pepper jack and left off the jalapenos so that my daughter would eat it, but the jalapenos or hot sauce taste just as good sprinkled on after baking!0 -
I totally forgot to add a recipe yesterday. I will have to do that later today. I love stir fry, too, and do use it a lot. Yum!! Broccoli is yummy in stir fry and even carrots are delish! Do you guys have a wok? I love mine.
I'm gonna try out those recipes, Rose. I will be doig as you did and leaving out the jalapenos and using regular jack cheese. I don't like a lot of heat.0
