Thai Peanut Sauce

This is a spicy, peanutty sauce that's good for dipping (chicken, shrimp, tofu, make Indonesian satay) or over noodles.

1 1/2 cups creamy peanut butter
1/2 cup coconut milk (can sub fat free evaporated milk but it won't be as good)
3 tablespoons water
3 tablespoons fresh lime juice
3 tablespoons low sodium soy sauce
1 tablespoon fish sauce
1 tablespoon sriracha
1 tablespoon minced fresh ginger
3 cloves garlic, minced
1/4 cup chopped fresh cilantro
1 tsp sesame oil (optional but adds a whole lot of flavor)

Mix all ingredients together except cilantro in a bowl. Leave in the fridge for a few hours/overnight for the flavors to develop. Add the cilantro right before serving.

    OMG. Sounds delicious!

    This would go great on a chicken dish I think.

    Here's a simpler version of Thai peanut sauce. Very simple and delicious! No extra spices were necessary because the PB was spicy enough!

    1/3 cup hot water
    2/3 cup PB&Co The Heat Is On
    1/3 cup soy sauce
    2 tablespoons lime juice
    1/4 cup light corn syrup

    Combine all ingredients in a large bowl and stir well.

    We served it over chicken and couscous.

    I had a salad yesterday that had Thai Peanut Sauce in it....yum. Something about it just makes things taste so much better haha
