Meal Plans for Week of 2/12

What's for dinner, girls? Last week, we barely stuck to our menu plan, so I'm rolling over a few things. Good news is we did eat at home, just not what I had on the plan - lol.
Tonight: coconut chicken fingers (modified from ourbestbites.com) w/ roasted broccoli & sweet potato fries
Tuesday: flatbread pizzas w/ salad
Wednesday: lemon pepper chicken w/ brown rice & peas
Thursday: BLTs with carrots & vegetable soup
Friday: beef tips over egg noodles w/ green beans (allrecipes.com recipe)

Great loss last week!! Did you see skinnytaste's coconut chicken salad? We made them and they were amazing. Might save you some time modifying the our best bite's one.
This week for us:
-Skinnytaste baked mac n cheese with spinach. (had it last night and it was SO yummy. Everyone loved it!)
-taco salad
-skinnytaste chicken divan
-skinnytaste meatloaf muffins and mashed potatoes
-Garden chowder (from Passionate Homemaking)
-and I think I'll make heart shaped homemade pizza for valentine's day with salad
Last week for lunch I tried something new that was yummy. I don't think I posted it yet, but I saw it somewhere and then modified it since I didn't have the ingredients she called for, but it was 8 wonton wrappers topped with TJ's salsa refried beans (1/2 cup divided onto the 8 wrappers), .7 ounces cheddar cheese and a little cilantro. You wet the edges and then fold one side over to the other so it's a triangle. Place on a sprayed cookie sheet and then spritz with cooking oil before baking. I think it was 375 for 18 minutes and flip in the middle. Eat it with Jen's guac salsa. So good.
It's 312 calories for all 8.

Melissa - just checked out the skinnytaste coconut chicken salad - pretty similar to what I'm making. Thanks for sharing, I'll just follow that recipe. Better than dipping in butter...mmmm butter, LOL! The wontons sound delicious also - I love love love refried beans, we make them in the crockpot (so easy), so I have some frozen already. Bonus!0

I haven't had dinner in almost a week- LOL!! But seriously, I have been so sick and if you look at my food diary, you'll see I've eaten pretty much nothing for days. It's been miserable, but on the upside, I lost 6 lbs- WOW!!!
I only documented 2 because I don't know if it will stay off, but it was a nice boost to my slight plateau I was experiencing. What are the chances it won't come back on?? I'm thinking good since I'm still going to be eating my calorie limit to lose, although not sure if my metabolism took a hit while sick, we shall see.
I have no meal plan for this week. In fact I can't even think about eating dinner right now.......I just forced myself to eat an egg for breakfast.0 -
