What do you do when you're sick?

Normally I cook all my own meals and I try to use only whole foods, minimally processed stuff. But 3 weeks ago I got really really sick with a severe flu, and I didn't have the energy or stamina to cook anything. I went through my emergency frozen GF Amy's meals, but I only had 2 of those to start with. I had a couple GF Progresso soups but after that...what do you do? I live alone and don't have anyone else to rely on to help me out. I was out of options and not well enough to go to the store, so I just ended up not eating for a few days. It's not like I can have pizza delivered! What do you when you're too sick to cook for several days?
I'm still not 100% (it was really bad) and finally managed to go to the store today, but I had to focus on getting foods that I could prepare with minimal effort, so a lot of processed junk that I don't normally eat (and it's so hard to find GF easy-to-prepare meals anyway). But I don't know what else to do!

Here are my go to fast meals:
Grilled cheese sandwiches (Udi's bread)
Cereal
Pancakes (Pamela's) and eggs
Pizza (Udi's crust)
Chips and cheese
You could prepare so freezer meals (Baked Ziti, tater tot casserole, etc) to defrost and cook. I also own 2 different GF crock pot recipe book. http://crockpot365.blogspot.com/0 -
Bob's Red Mill GF Oatmeal with Natural Peanut Butter
Asian rice noodles (the ones you don't boil as much as soften in really warm water) and peanut butter
GF Rice Krispies and skim milk0 -
I keep a bunch of frozen fruit and vegetables on hand as well as protein powder. I can make a smoothie in just a couple of minutes with minimal fuss that way. If you can stomach them while sick eggs are an easy and fast protein that you can make a bunch of different ways. Frozen vegetables and frozen skinless chicken breast can be combined easily in a variety of ways. It doesn't take much to pop a chicken breast into the oven for awhile and you can season it a bunch of different ways for variety. When I don't feel good though the smoothie is my go to since it's fast, easy, nice on a sore throat and has lots of good vitamins that will help me feel better fast.0

I rely on GF Cereals when I can't or don't want to cook as well as nuts. I also eat my fair share of enchiladas or tacos. I keep cooked crumbled beef, frozen, so all I have to do is thaw and add GF taco seasoning, and corn tortillas I keep on hand at all times )!
I'm a big fan of bulk cooking if you have freezer space. I cook chicken breasts, and ground beef (crumbled or in patties for burgers) to keep on hand for quick meals. Frozen veggies (bought or do your own) and cheese are always in my freezer also.
Bottom line, if you can stomach food when ill, I always go back to cereal. Heck, I eat cereal all the time anyway! I LOVE Chex because all but there Wheat Chex are GF and so yummy!
Good luck! I do hope you get to feeling better soon! It's not fun to be sick for so long!0 -
