So I thought I'd try a different type of topic in here.
I find that cooking for just myself kind of sucks. I'm not a fan of leftovers so I don't like making big meals that serve 4 people and just saving the rest. I don't buy much fresh food because some portion of it usually goes bad before I have a chance to eat it.
I tend to rely on frozen chicken/pork and something quick like vegetables or rice to go with it. Frozen vegetables that steam in the bag are my favorite, so easy and cheap considering how long they last in the freezer.
Anyone care to share their favorite meals for a single person?

I often eat eggs for dinner - there are a million different ways to prepare them.
My other trick is to pre-cook several chicken breasts over the weekend. I always have whole wheat tortillas and veggies on hand, so I make a wrap of some sort, which can be eaten hot or cold. Plus, I usually have salsa, bbq sauce, honey mustard, etc. on hand to mix up the flavors.0 -
Yes, you hit the nail on the head. Cooking for one is ungratifying. You are slinging meal after meal and it is energy sapping.
Grocery shopping for a household of one can be equally challenging as cooking for one.
Spinach salads are something I often do in evenings. White meat of a rotisserie chicken, spinach, dressing, maybe some cheese and you've got a balanced meal there.0 -

I buy tons of the steamfresh frozen brocolli when it's on sale like 4/5 or 10/10
I buy bags of dole salad when it's bogo.
That's about it. I keep some dressings and seasonings around. I usually splurge when I go out with friends (which I've been doing too damn much of lately).0 -
I actually like cooking for myself... I don't have to worry if anybody else will like it.
I can eat the same things over and over (which is helpful in my fitness/ health journey) so it's easy for me.
I eat eggs everyday for breakfast.. I throw in some turkey bacon, spinach, and I eat toast.
For lunch I usually eat tuna on pita bread or make my own personal pizza on pita bread using turkey pepperonis, mozarella cheese, spinach, red onions, and this great pasta sauce by Prego called Light Smart or something. Sometimes I'll eat subway if I don't go home for lunch.
For dinner usually fish with veggies or chicken breast with veggies.. every now and then I'll make tacos using corn tortillas or I'll make a huge tex mex type of salad using chicken, salsa, black beans (that I boil myself), veggies and a dab or fat free sour cream.
I too kept having veggies/ fruits and other foods go bad so now I will literally buy 2 tomatoes, 2 limes, etc.. that's enough for just me, 1 or 2 of every veggie I need for the week.
I also will cook several chicken breasts to have ready.. or make a medium pot of black beans to have ready, etc etc.0 -
One thing I do is buy a green pepper, and then cook up a little brown rice and a small amount of ground turkey, mix with some spaghetti sauce, stuff it and cook it in the oven at 350 for a little more than 1/2 an hour. Easy to portion out. You can make a few of these and microwave them for later!0

I'm not a great cook and eat simply, but I dont mind cooking for one either. Much easier cook lower calorie food for one I think. If I cook for two I tend to make it more interesting with sauces etc, so not as low in cals......
I usually buy fresh carrots, broccoli, spinach, corn on the cob, tomatoes, onions, butternut squash and keep them in the fridge salad crisper box. Then every night I'll either bake a pork chop, chicken breast, salmon fillet, steak - all with different types of seasoning - and steam the veg to go with it. I eat veg every day so never throw out.
Lunch time, if I'm not out working, I'll cook a veg/cheese omelette or cook sausages with butternut mash and onions.....MMmmmm!

I cook and experiment a lot. Feel free to friend me. I probably have 40 recipes in my rotation. And I generally try 2-4 new ones a month. At breakfast time I tend to be pretty consistent, after that I am very random. I usually end up cooking a little extra protein and I re-purpose it throughout the week (maybe 2-3 times): in a salad, in a stir-fry or with some whole grains. Sometimes I good 1-2 extra portions and freeze them for when I have a busy week.
Most dinners, if I am feeling lazy, I'll roast or sautee a protein, make 1-2 veggies (steamed, roasted, stir-fried) and make a sauce or spice blend or both to tie it all together. I usually have leftover grains (I usually have them with 2 meals a day, so this week I am skipping grains at diner) if I am hungrier or do without.0
