I tried this tonight and it was awesome!
Roasted spiced Sweet potatoes and Anjou pears!
2 lbs sweet potatoes (peeled and diced into 1" cubes)
2 pears
1/4 cup sherry vinegar
1/4 tsp cinnamon
1/4 tsp nutmeg, ground
1/4 tsp ginger , ground
1/8 tsp ground cloves
Heat oven to 400 F.
In large mixing bowl, toss the sweet potatoes with the vinegar & spices. Put potatoes onto a baking sheet.
Roast for about 20 minutes.
While potatoes are roasting, take pears and toss them into the remaining vinegar/spice mixture.
Add the potatoes onto the baking sheet with the potatoes, and roast for another 20 minutes or until the pears are golden brown, and potatoes are tender when pierced with a fork.
Nutrition Info: (per 1 cup serving) Calories: 145 Fat: 0g Sodium: 140 mg Carb: 32g (Fiber: 6g Sugar: 12g) , Protein: 2g
