Vegetables....friend or foe?

I am always trying to get more vegetables in....

Anything you enjoy....roasting/grilling/steaming???

Would love some new ideas!

  • Asparagus is in season! It's super fast. If you need info on how to make it, let me know!
  • I cut up veggies...my favs are squash, broccoli, bell peppers, carrots and spray with olive oil, then sprinkle with just a bit of parmesan...also like to sprinkle some garlic or onion salt on for taste. Very easy and very good.
  • I completely agree with the asparagus comment Lindsey! I personally love grilling it anytime of year with a little olive oil (get the persian lime from All Spice in Des Moines and it is to die for), salt and pepper and just throw it till it picks up grill marks. Bring it in and squeeze a little lemon juice over it and you can't go wrong. You can do the same thing but roast it in the oven. If you want to make it look fancy once you finish cooking i wrap it in prosciutto (but it does add a few more calories).

    Fresh green beans are always a pretty good way to go. They are simple to clean and fix. Make sure not to over cook them or they get mushy. Add a little salt, pepper, butter and lemon juice to them.

    Fresh salads again are a pretty easy thing to do. Right now in the spring you can get some tender and young lettuce or even better plant your own! A very simple dressing recipe is:

    1/2 cup olive oil (Use the persian lime from above makes it even better!)
    3 tablespoons fresh lemon juice
    1 tablespoon minced shallot
    1 1/2 teaspoons Dijon mustard
    1/2 teaspoon grated lemon peel
    1/2 teaspoon sugar

    You can add whatever other fresh veggies are in season to the salad to add some color and flavor. In my family we also add in some feta or bleu cheese (not me) crumbles for a little saltyness. Definitely check out Des Moines Farmer's Market when it opens in a couple of months!

    Thanks Gibbons. I have never been to the DSM farmers market, but I am putting that on our to-do list this spring/summer!
  • I hear it is hard to get small children moving early in the morning but the best time to get there is 7:30/8:00.
