Peanut Butter and Banana Omelet

This got a positive reaction in the food porn thread, so I thought I'd share the recipe here. I love this omelet! I adapted this from Peanut Butter Boy (http://www.peanutbutterboy.com/peanut-butter-banana-omelette/). He has pictures of the cooking process there, as well as some other amazing recipes!
Peanut Butter and Banana Omelet
Ingredients:
2 eggs
2 Tbsp water
1/2 tsp sugar
1 banana, cut into slices
2 Tbsp peanut butter.
1. Place a medium sized skillet over medium-high heat until hot.
2. Combine the eggs, water, and sugar in a cup or small bowl. Beat until the mixture is a uniform color and you can't see very much whites anymore.
3. Spray pan with cooking spray and pour in the eggs.
4. Place sliced bananas in the pan, distributed evenly.
5. Lift the sides of the omelette up with a spatula to allow the still-liquid eggs to flow underneath and cook. After a few minutes, flip the omelet over.
6. Spread a generous coating of peanut butter onto one half of the omelet (like a semicircle/half moon). Fold the omelet over and allow to cook for another minute. Flip it onto the other side for one last minute and serve!
For this one I used Sunland Banana Peanut Butter. I was in a banana mood I guess.

Here's the same concept, although not as nice looking as before. This one has bacon, red pepper, onions, mushrooms, spinach, and PB&Co The Heat is on. Delicious!
