I LOVE Mexican food and cookbooks.. so I've been "defatting" my recipes. This one went from 627 calories to 367 per serving.

1 can La Victoria Red Enchilada Sauce (or use whichever brand you like.. or make your own, but it adds about another 25 calories or so)
1 lb 90/10 ground beef
1 lb jimmy dean reduced fat pork sausage (I haven't tried turkey sausage yet)
1/4c chopped onion
1 cup fat-free rosarita chile-lime refried beans
16 corn tortillas (walmart brand has less calories/fat)
2c great value 2% reduce fat shredded fiesta blend cheese.

cook beef, sausage & onions until meat is no longer pink. drain if needed. stir in refried beans until hot.

spread 1/4c or less of sauce in bottom of 13x9 & 8x8 pan (this recipe uses a 13x9 & an 8x8 pan since I'm using corn and not flour). Using a basting brush, brush a little sauce on ea. tortilla, place not quite full 1/3 c of filling, sprinkle with an avg size pinch of cheese, roll, place seam down in pan. Do this for all tortillas. pour remaining sauce over both pans.. and sprinkle with remaining cheese. Bake, uncovered at 350 degrees for 18-22 min, or until bubbly and the cheese is melted. You can serve with sour cream, guacamole, rice or whatever.. just be sure to account for the extra calories.

Enjoy! I took the extra portions and froze them for later meals.
