Ok so I noticed only one other active group that focused on healthy eating on a budget and it seems more geared for students and is based in the UK, so I have decided (with a little prompting from a friend!) to start up a group. I see posts all the time about how to eat healthy and cheaply, asking if it is a myth that healthy eating is more expensive or not, etc so I think we could all use one place to keep these types of posts for ease of reading! I was thinking we could all post:
tips on budget grocery shopping.
how to cook from scratch in a simplified manner that will allow us to not only eat great food cheaply, but where we can control what goes into our meals and simplified methods to not make it quite a big chore.
Reviews on kitchen appliances (you know how much of a godsend a good food processor can be!)
Recipes.
Remakes of favorite fast food meals and favorite grocery store packaged foods (like taquitos and frozen burritos).
Whatever else we feel is relevant.

Thank you so much for starting this group! I've got a busy weekend ahead but I look forward to digging in next week and seeing what we can come up with. With a family of 5 to feed on one income and our desire to eat healthy most of the time this group is a wonderful thing for me!
I'm especially interested in makeovers of some high calorie favorites!0 -
I have been gone a long time, so much going on in real life. I found another really great meal that is easy to make, cheap and healthy...well, healthier. :ohwell: Skillet meals. You can use a simple starter recipe and mix and match what goes in for all kinds of main courses.0
