Hungry Girl’s Club Soda Chocolate Cake


Chocolate cake is usually a diet disaster, but it doesn’t have to be. TV host, author and "foodologist" Hungry Girl Lisa Lillien’s trick is the perfect way to shave off some unwanted calories. By using club soda instead of normal baking ingredients, you can cut out 100 extra calories per slice! How’s that for an easy swap?

Makes 12 Servings

Ingredients:

1 (18.25 oz) box moist-style dark chocolate cake mix

1 (12 oz) can club soda


Directions

Preheat oven to 350° F. Spray a 9-inch by 13-inch baking pan with nonstick spray. In a large bowl, whisk cake mix with soda until smooth. Pour into the pan. Bake until a knife inserted into the center comes out clean, 30 to 35 minutes. Slice into 12 pieces and enjoy!

    Mexican Chicken
    2 Medium chicken breasts, no skin, no bone, R-T-C -- thawed
    4 slices bell pepper -- sliced in rings
    4 slices pepperoni -- The large slices
    8 tablespoons salsa
    Salt, garlic powder, and pepper -- to taste
    1 cup shredded cheddar cheese

    Slice the chicken breasts in half as though butterflying but separate completely so that you have four pieces.
    Pound each piece out pretty thin with a tenderizing hammer and placing each piece between saran wrap.

    Serves 4
    Per Serving: 199 calories 3 carbohydrates 1 fiber 530 sodium 19 Protein 12 Fat


    Place 2 bell pepper rings on each piece of chicken.

    Spoon 2 tablespoons of salsa onto each piece of chicken.

    cover with 1 slice of pepperoni.

    Cover all with cheese.

    Place into foil lined pan and bake at 400 degrees for 15 to 20 minutes till done.

    Juicy Meatloaf

    100% Pure - Lean Ground Beef 97%, 1 container (16 oz ea.)
    Kroger Eggs (Medium) - Raw, 1 Whole
    Kroger - Frozen Chopped Green Bell Pepper, 0.25 cup
    Kroger - Chopped Onions Frozen 340 g (12 oz), 0.25 cup
    Kroger - Coarse Kosher Salt, 1.25 tsp
    Mccormick - Black Pepper, 0.25 teaspoon
    Bread - Nature's Own Whole Wheat Bread, 1 slices (57g)
    Kroger - Tomato Sauce 8 oz, 1 cup 80
    Kroger - Low Sodium Vegetable Juice Cocktail, 5.28 floz

    Process the bread to make bread crumbs
    Mix the first seven ingredients
    Shape into a loaf in a baking pan
    Mix the low sodium Vegetable juice coctail and the tomato sauce
    Pour the tomato mixture over the meatloaf
    bake 1 hour at 350

    I usually just line a cake pan with foil and make it in there. When finished you just throw the foil away. Easy clean up.

    Baked Chicken Nuggets

    3 skinless, boneless chicken breasts
    1 cup Italian seasoned bread crumbs
    1/2 cup grated Parmesan cheese
    1 teaspoon salt
    1 teaspoon dried thyme
    1 tablespoon dried basil
    1/2 cup butter, melted

    Directions
    1. Preheat oven to 400 degrees F (200 degrees C).
    2. Cut chicken breasts into 1 1/2-inch sized pieces. In a medium bowl, mix together the bread crumbs, cheese, salt, thyme and basil. Mix well. Put melted butter in a bowl or dish for dipping.
    3. Dip chicken pieces into the melted butter first, then coat with the breadcrumb mixture. Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.

    LAZY CABBAGE ROLL BAKE

    This recipe remake skips the canned soup and uses healthy brown rice, which increases fibre.

    1 cup: 220 calories, 4.5 g. fat, 35 mg. cholesterol, 30 g. carbohydrate, 5 g. fibre, 16 g. protein, 554 mg. sodium.

    2 teaspoonos canola oil
    1 pound extra-lean ground beef
    1 cup chopped celery
    1 cup chopped onion

    14 ounce can diced tomatoes (with juice)
    14 ounce can tomato sauce
    1 cup long-grain brown rice
    1 cup water
    1/2 teaspoon pepper

    5 cups shredded cabbage (lightly packed)
    1 cup grated carrot

    Heat canola oil in large frying pan on medium heat. Add next three ingredients. Scramble-fry for about 10 minutes or until celery is softened.

    Add next five ingredients. Heat and stir until boiling. Transfer to greased 9 x 13 inch baking dish.

    Scatter cabbage and carrot over beef mixture. Bake, covered, in 350F over for about 1 1.2 hours, stirring at halftime, until rice is tender. Let stand, covered, for about 10 minutes. Makes about 8 cups.

    CORDON BLEU CHICKEN

    4 boneless, skinless chicken breast halves
    (4 – 6 ounces, 113 – 170 g, each)
    ½ teaspoon garlic powder
    ¼ teaspoon pepper

    5 ounces shaved lean deli ham
    1 cup grated Swiss cheese

    ½ cup Panko (or fine dry) bread crumbs
    1 tablespoon canola oil
    1 tablespoon fresh parsley

    Cut each chicken breast in half horizontally. Place 1 chicken piece between 2 sheets of plastic wrap. Pound with mallet or rolling pin to ¼ inch thickness. Repeat with remaining chicken.

    Sprinkle garlic powder and pepper on both sides of chicken. Arrange on greased baking sheet with sides.

    Arrange ham over chicken. Sprinkle with cheese.

    Combine remaining 3 ingredients in small bowl then sprinkle over cheese. Cook in 375° F oven for about 25 minutes or until internal temperature reaches 170°F. Makes 8 pieces.
