Are there any other Gluten Free Vegetarians?

Would LOVE to trade tips, tricks and recipes....

    I'm pescatarian, intolerant to wheat, cow dairy, msg, cruciferous vegetables, peanuts, vinegar and locust bean gum.

    I eat lots of vegetables, fish, beans, lentils, etc. I have to cook everything (well, in truth my partner is in charge of cooking :wink: ) because I can only eat salad or baked potato as a safe option when I go out unless it is a known venue that caters for my weird diet.

    My partner has a repetoire of chinese and indian dishes to die for, once in a while I get allowed to cook and I go for more traditional foods (including microwave steamed pudding :drinker: ).

    I used to eat a lot of Tofu but my partner isn't as keen so tends to use fish rather than tofu. He isn't pescatarian and he has no food intolerances, but he just eats what I eat (he's even dropped the chicken breast for his plate at dinner).

    A lot of the dishes we use with fish would work just as well with tofu

    Care to share some of your recipes... with a BRAND NEW Vegetarian - I think I am Lacto - Pesc:huh: ... that is gluten free???

    I need something that I can take on the go..... I work full- time and DD has practice 4 nights a week - so I am ALWAYS on the move. I do have a Microwave to re-heat at both place....

    Oh and I am traveling this weekend... 4 1/2 hrs 1 way would love snack ideas other than nuts... or JUNK! I have a GREAT HFS(Health Food Store) but the prepackaged stuff has SO MANY CALORIES when you go Gluten Free!

    Risotto is a quick, easy meal that can be eaten hot or cold. This should be enough for 2/3 meals depending on your appetite
    Steam some veg of your choice
    Chop tofu (fresh or smoked) into cubes
    Heat oven to 200 C
    Saute some onion & garlic in butter until soft in an overnproof pan with lid
    Stir in herbs of your choice
    Stir in 250g risotto rice and coat in the butter
    Pour in 500ml vegetable stock
    Pour in Veg
    Stir well and bring stock to boiling point
    Put the lid on and pop in the oven for 20-25 minutes
    Stir in 45g grated parmesan

    You can do this with any combination of veg, tofu, prawns

    I love it with squash, sugarsnap peas, plain tofu and sage
    or just some frozen mixed veg with smoked tofu and mixed herbs
    whole baby tomatoes are great in this as they explode when you eat them!!

    Snacks I eat popcorn, lighlty salted or plain. Vegetable sticks fill you up more. Gluten free cornflakes make a good crisp substitute or corn tortillas. Pumpkin seeds, dried fruit, sesame seeds, walnuts, pistachios, almonds. If you have two hands free then I go for tofu yoghurt or the tofu desserts as they are low calorie but the small amount of protein they give seems to keep me full for longer.
    There are some snacks that are almost addictive...... baked tofu or buckwheat thins.....

    Well I am gluten free and my sister, whom I am very close with and cook a lot with is a vegetarian. So I have some ideas for when we eat together:

    QUINOA. We eat a lot of this and add whatever roasted veggies/potatoes/ nuts and seeds we have on hand
    Polenta: again, very versital but one of my favorites is to make a polenta lasagna- you use the polenta in place of noodles. Very good!
    Rice: Rice and beans!
    Also, mexican dishes with corn tortillas is another fav: cheese enchiladas, bean burritos, tacos, nachos, etc

    I would be 100% veg, but it's hard when my hubby does a large part of the cooking. He can handle "no meat other than chicken and turkey" but I feel bad enough having to re-work the kitchen with GF options. I have a few sites bookmarked at home and will try to remember to post when I get home. And yeah, quinoa is awesome.
