Gluten Free Brownies

Okay, so I have to have something sweet at least once a week, so my cheat day in on Mondays after I have weighed in. If you have not tried them, Betty Crocker has four gluten free cake mixes. The brownie mix is just a God send. My daughter is a pastry chef, so IDK if she added anything to the batter, but man do they hit the spot. She has also used the yellow cake mix as a base for a yummy banana nut bread. Happy eating!

    The chocolate cake is pretty good as well.

    I use the yellow cake mix to make a GF carrot cake that is so yummy!!! even my husband loves it :smile:

    It is not something I make very often, but sometimes you need that treat, or if I need a dessert when company is coming and I think I might want some too.

    I have been making baked goods with almond flour. It has a lot more nutritional value than what you'd find in a GF mix. Those rice flours, etc have very high glycemic index and no protein or really anything redeeming in them. I have made cake and brownies using almond flour and while the cake especially, didn't look like regular cake, both came out very good. I just use google to find recipes. I am actually going to make this one on Saturday:

    Have you tried black bean brownies? They are soooo goooood! Even my gluten-eating friends love them!

    i havent had the betty crocker mixes (havent seen them) but i've tried the box mix from gluten free. those were pretty good too
