Coconut flour anyone?

Hi all,

Just wanted to know if anyone has used coconut flour as a Gluten free flour substitute?

I bought an organic 100% coconut flour bag at my health food store and used it in a cake and pancakes so far, it seems to work well. It has 58% fibre and helps boost thyroid, just need to use heaps of eggs and oil with it.

Let me know of your experiences please!

    I used it once (along with almond flour) to make some muffins. They were good. I think I found the recipe at WellnessMama. All her recipes are grain-free. Yep, there were 5 eggs in the recipe, and some coconut oil, lol.

    I think you can use only 10% in recipes, it's very dense and will take a lot of moisture. I accidentally use too much all the time and then regret it, it gets dry.

    I love almond flour for baking, that works great.
