Going from Gluten Lite to Gluten Free

I have not been diagnosed nor seen any healthcare provider about gluten sensitivities. Last September, I started a personal project to slowly eliminate gluten from my diet and to see how I feel. I can honestly say that I fell significantly better when I avoid gluten.
To that end, I want to transition from gluten-lite to gluten free! I'm nervous, but I know I can do it. It's in my health's best interest. Oh, and as a side note, I'm a vegan too, so a lot of the GF breads I can't have because of eggs. But since that's my choice, I can live with that too :)

    Good luck! I find that it is not a big deal to give up bread all together. It used to make me feel so bad when I would eat it that I started an adversion to it. After my Celiac diagnosis, I had to be strictly GF. I don't miss bread at all. I wasn't a big pasta eater, either, for the same reason. Although, I am loving Thai rice noodles with homemade peanut sauce.

    I can't have eggs either. I make hamburger buns and freeze them. Then whenever I need to make a sandwich I just pull one out. Works great.
