Local Foods as Part of a Low Cal Diet

Lately, I've been boiling shrimp (just frozen Louisiana shrimp from the freezer) with some small potatoes, aparagus, and mushrooms in crab boil for a light lunch.

Ideas for eating other local favorites in a healthy way? I'd REALLY love a healthy recipe for Crawfish Monica. Impossible?

    we always have catfish in the freezer, my dad's a fisherman. I like to marinade that in italian dressing and put it in the oven. just don't let my parents cook it because they deep fry everything.

    also, the frozen tilapia at the grocery story is excellent with many different marinades. I'm a teryaki fan but don't put teryaki on catfish, catfish has too strong a taste for it.
