Phillo Dough Taco Salad

I had high hopes for this.

The first thing I found was that phyllo dough is very flaky and comes apart while you are putting it in the muffin cups.
Secondly, the muffin cups I were using were standard size, but were way too small to fit all of the things I wanted to put in my taco salad. Lettuce is big when not shredded to tiny little pieces, so it took up the whole cup before I even put in my ground turkey.
Luckily, I called an audible (football speak for made a last minute change) and crunched up the cooked phyllo and added it to a bowl with the rest of my taco salad.
Without the calories of a taco shell, this was a win.
I added: ground turkey (3oz), lettuce, tomato, black olives, jalapeno peppers, low fat cheese (2 tablespoons), and fat free sour cream. (2 tablespoons) The crunch of the phyllo dough was a nice touch. (1 sheet, 32cals) for a grand total of 200 calorie dinner, VERY filling meal.

Make sure you spray your phyllo with low fat butter spray for flaky and tasty cooked results.
