Stuffed Peppers (meatloaf) & rice

STUFFED BELL PEPPERS (meatloaf) & RICE (CROCKPOT)
Yield: 4
INGREDIENTS:
4 bell peppers (per person) - cut top off (1/4 inch) and remove guts (inside)
1 lb ground meat (turkey/chicken)
1/2 cup oats
1/4cup-1/2cup ketchup
baby food jar of carrots (4 oz -stage 2) *try squash, green bean, etc.
1/2 cup diced onion (or use 1 tbsp onion powder) *veggies fresh are healthier
36 baby carrots sliced in half cut into thirds
salt & pepper to taste (about 1/8-1/4tsp)
2 cup brown rice (instant)
1-1/2 cup water
1-1/2 cup low sodium chicken broth or veggie broth
ASSEMBLY:
In crockpot, turn on HIGH as you add ingredients.
Mix meatloaf ingredients as follows:
~1 lb ground meat (turkey/chicken)
~1/2 cup oats
~1/4cup-1/2cup ketchup
~baby food jar of carrots (4 oz -stage 2) *try squash, green bean, etc.
~1/2 cup diced onion (or use 1 tbsp onion powder) *veggies fresh are healthier
~salt & pepper to taste (about 1/8-1/4tsp)
Let it rest in bowl.
In crockpot, add 1-1/2 cup water, 1-1/2 cup low sodium chicken broth or veggie broth, 2 cup brown rice (instant), stir slightly to blend.
Now, in each empty bell pepper, add carrots to each (try to be equal per pepper), now stuff the pepper with meat mixture into each, equally. After they are stuffed, place each stuffed pepper into the crockpot.
*if you are going to be gone all day, change the heat setting to LOW for 8-10 hours cooking
*If you want this fast, keep on HIGH for 4 hours until done.
Use a meat thermometer, it should read 165 inside the meat stuffed pepper.

**PERSONAL NOTE**
I've made these up at 2pm in afternoon and they were ready to eat by 6pm on HIGH in my oval crockpot. This is a family favorite that my husband actually REQUESTS.
If you haven't ever tried babyfood in your recipes, its a great way to sneak in extra servings of veggies, especially for those in your family that "say" they dont like veggies.
****TIP****
When i have to fix a canned pasta for my son (chef boyardee), i add 2-4 oz of the carrots baby food (stage 2-4oz) and 1 TBSP ketchup. He has NEVEr known and he gets more veggies/nutrients. ***I started slowly with 1 TBSP, then next time added more so he got used to the flavor.
