YUM!
http://www.skinnytaste.com/2012/07/sausage-stuffed-zucchini-boats.html#more
I will be making this again.
I am one of those people that loves anything-parmigiana - and of course, putting it on fresh baked italian bread is the only thing I've ever known what to do.
But these are really fun, easy to make, and I didn't miss the bread at all (even though hubby was sitting in front of me with his on Italian bread!)
The hardest part was decasing the sausage - which then created sausage-mush. I read afterwards that I was supposed to cook them at that point before attempting to cut them - that would have made things a lot easier!
I made a side salad to go with it. VERY filling meal for 150 calories
