Wow! I highly recommend this one. A little messy to make, but its worth it.

I used thin chicken cutlets. I always imagined that something like this would be difficult to roll up, but it was very easy. No toothpicks, just baked them seam side down.
I divided this recipe in half because I only wanted to make 4. I didn't use as much spinach because hubby doesn't like it, so I didn't want to overwhelm him with it, but when I make it again, I will simply roll up his first, and then add a bunch more spinach for the 2nd two.
