Sushi Crunchy Rolls - looking for GF recipe

I love the crunchy shrimp tempura crunchy rolls made at the sushi stand in my local Kroger Marketplace. But, I have not been able to have them since I went GF. I have the Tamari GF soy sauce and it is working out well in my other stir fry recipes. But, I don't have a recipe for making these rolls. If the lady who makes them in Kroger understood me, and that is hard to tell because her English is extremely limited, she might be willing to try and make them GF with my kind of soy sauce. But, she hardly speaks English and I don't know if there are any other sources of gluten in her rolls.
So, I'm hoping to find a good recipe. Anyone have one to share?

Well, I don't have a recipe but after much searching (you know me), I did find this interesting article that talks about making it. They mention that you can change the flour to a mix of tapioca and rice flour and supposedly - it improves them!

This is just showing the preparation of it. You'll need to modify the actual recipe. The only portion I'm a little concerned about is the fish stuff they mention. Anyone have advice? Other websites that might help her?

Thanks Moni, but those are recipes for just tempura.... I am looking for crunchy rolls... here is a recipe demonstrated, but with some pretty weird ingredients and not gluten free...

What about frying some tofu?

That might replace the crispy stuff they mentioned in the roll. You could probably break it up.

You can try crushed up pork rinds maybe? (I can't view the youtube video at work to know if that would work.)0
