Roasted vegetable combos

This is the easiest way to have a lot of vegetables on hand, and the roasting gives them a lovely flavor.


NOTE: I use a pizza tray covered in aluminum foil for easy clean-up
CABBAGE,CARROT, ONION & CELERY

1 tbs oil

1 med head chopped cabbage

1/1/2 med. diced onion

5 grated carrots

2 stalks chopped celery

1 tbs chopped garlic.

Toss and roast in an oven preheated to 365 degrees for 40 minutes.



DAIKON RADISH

Peel and dice 1 med. sized daikon radish

1 large diced onion

salt and pepper to taste, generally more pepper than salt.

toss with 2 tps of olive oil if desired

roast in 365 preheated oven for 30 to 50 minutes.



YELLOW ZUCCHINI WITH ONION

Dice yellow zucchini

Dice 1/3 that amount of onion

Toss with 2 tsps olive oil if desired

Roast in oven preheated to 365 for 40 minutes



The roasted daikon mix and yellow zuccini mix are very nice tossed together after cooking

Note: If I think the veges are not quite cooked enough when I take them out of the oven, I make them into a mound in the center of the pizza tray and cover with an up-side-down macaroni pot. This allows them to finish their cooking in their own steam. This is also a nice time to add a few frozen peas. They will cook by the heat of the other vegetables.
