'Morning!
I made this last night and am glad I did. I know a lot of us are trying very hard to cut out chemicles, preservatives, and artificial colors in our diets. Eating organic and such. I came across this recipe many moons ago. I calculated the results. It makes approximately 48 1-tablespoon servings at 54 calories per serving. Not bad for good butter flavor and healthy olive oil. Plue, you know exactly what's in it. All natural.
Whipped Butter Spread
2 stick butter
1/2 cup olive oil (use one that is lighter in color if you don't want the flavor)
1/2 cup water
Whip butter until light and fluffy. Slowly incorporate olive oil until mixed. Slowly incorporate water until it's fluffy. Put in a tub and put in fridge to harden up. It stays very spreadable like tub margarine.

I love butter. I could almost eat a stick of Kerry Gold unsalted like a candy bar.
I don't though. That would be weird. And gross.
I may have to try this.
I like the idea of posting recipes. I've got some really good recipes that we use during feast days that aren't too bad for you0
