I made this today:

I think it's pretty awesome. It's not like traditional bread in both taste and size, but I think it's a great alternative to store bought gf breads.

Okay... you say it is NOT like them... so, umm... what IS it like? Can you share a picture of what yours came out like (saw the picture on the link) and maybe a description of what's different/good/bad - is it dry, moist, crumbly, firm, taste? Did you put the recipe into MFP? If yse, what are the calories, carbs, fat and what not per slice?

Recipes from Elana's Pantry are great! I can't wait for the weather to cool off so I can start to bake again.

I wish I had more time to bake. By the way, is it possible to be allergic to flax seed? I'm starting to suspect I am.

I just used Bob's Red Mill Bred Mix in my bread maker and boy is it good! It's pretty high in calories, 150 per slice when loaf is divided into 16 pieces, but it sure tastes good. Just thought I would pass this along.

This recipe has been my staple for over eight years. Sometimes I switch out some of the rice flour with teff or millet flour to get more nutrition. Since we are dairy-free also, I use Vance's Dari Free powder in place of the milk powder. I use Earth Balance Spread in place of butter. The sandwich buns and bread loaf always turn out awesome!:

For those of you wondering how I make the buns, I have two of these pans:
