Yummy Gluten free Dairy free pancakes

I have modified a gluten free recipe in the awesome book, Deliciously G-Free, to make some yummy gluten free and dairy free pancakes. I also reduced the sodium and calories from her recipe. But it's a great book to get you started on GF cooking. It explains all about the different types of flours & ingredients, their traits, & what you use them for.

Anyway, here's my recipe & it makes 15 pancakes about 3" each and only 106 calories.

Bowl 1 mix together:
1 cup sweet sorghum flour
1/2 cup white rice flour
1/4 cup tapioca starch aka flour
1 tbs granulated sugar
3/8 tsp sweetleaf stevia
2 1/2 tsp baking powder
1 tsp guar gum
1/4 tsp low sodium salt

Bowl 2 or small pan:
Melt 1/2 stick aka 4 tbs Earth Balance Buttery Stick

Bowl 3 mix:
1 1/2 cups unsweetened original flavor almond milk
2 eggs
1/2 tsp gluten free (pure) vanilla extract

When all 3 bowls are thoroughly mixed separately, stir the melted butter & liquid ingredients into the powder mix. Whisk till forms nice batter.

Heat griddle to 350 or when water skitters. Ladle 1/4 cup of batter per pancake. Turn when bubbled and dry on edges.
