Mild Celiac Disease

Just got diagnosed with this for the second time, but this one is permanent. I didn't believe my primary doctor (had no systems that showed I had this disease). Went to a specialist and got an Upper Endoscopy, tested positive for Celiac Disease, so I am back on my Gluten Free diet for LIFE!!!
Anyone have some good recipes? I am totally up to making them.

I have a question!
DO you have to be eating gluten to be diagnosed with gluten intolerance/and or celiacs disease? Last week I went on vacation and gluten had been removed from my diet for 4-5 months. I had such a bad reaction from what I ate I was sick for 2-3 days. I am so afraid to find out that I will have to eat gluten again to get tested one reason Why I havent called the doctor ;(0 -
My doctor told me to go back on a gluten diet for 30 days. I never had any of the symptoms, with the gluten diet so that didn't effect me. Now there is medicine out there that they can prescribe to help with the cramping to make it less serve. Because if you tested now, the results wouldn't show a definitive answer.

You have to be eating gluten to be tested. That is why my 19 month old who shows the signs has not been tested yet. As adults I think it is better to know if you have it or not.0

Yes - How stupid!! Of course these Dr´s had no idea of how bad you felt or they would not have said that.0 -
Keep in mind that the longer you stick to a GF diet, the worse your reaction may be the next time you eat some! If you have it mildly, some medications may help your symptoms but this is not the case for many people. I personally used to have what I would consider a mild reaction- nausea, vomiting, cramping and headaches. Now I must be very careful to avoid it because I have had seizures as a result of slip ups. Just be careful and take good care of yourself everyone.
What kind of recipes are you looking for? Things like replacement pastries? Or naturally gluten free meals?0 -
i would love some recipes as well, any kind. but kid friendly:) my son had blood work done and it came back positive , i was stunned as i didn't even know what it was. he is pretty much fine and hasn't has any issues ..... he goes for a biopsy on friday to see if it is celiacs or not. i am not sure what to think... i hear you can just have a sensitivity, be intolerant/allergy and full blown celiacs... so i have no idea what to expect and what his results will be. he has no symptoms.0

As far as main courses go, I find that salads are a great choice for me, particularly when eating out. You can dress up a salad in a zillion different ways so it never gets boring. One I loved when I was a kid was adding thin slices of salami and some mozzarella and topping it off with thousand island dressing- we called it pizza salad, haha. Now I prefer crumbling up a little bit of feta and adding pine nuts and cherry tomatoes with some kind of vinaigrette. I'm addicted to Earth & Vine Honey Pear vinaigrette right now, its so delicious. Fruit salad and tuna salad are gluten free too, and really tasty. There are a lot of good gluten free brands of pasta, and they tend to be whole grain which is great for your metabolism and for your gut.
Other things I do is grilled fish and vegetables. Try adding a good salad dressing while you're grilling your fish, it ends up quite tasty. Vegetables I also saute in olive oil and salt, sometimes with a bit of garlic for more flavor. Stir fry rice also adds variation to your diet. You can do mashed potatoes, eggplant parmesan, baked squash- all kinds of foods that don't have gluten.

If you need flour, I recommend Bob's Red Mill Gluten Free All Purpose Baking Flour, or Pamela's Kitchen Baking Mix. It's a lot easier than mixing your own flour, believe me. I bake all the time tho so I have a plethora of recipes if you need some.0 -
thx. i know if it was me i would have no issue going gluten free, your suggestions are all good " for me"... lol BUT for a almost 6 year old, he won't eat any of what you mentioned! We tried him for the millionth time on potatoes tonight and still a no go. hubby even tried to bribe him with money, toys etc to get him to at least try one little bite. NOPE nada, so stubborn. i told him we are not going to live on rice for a side dish! he is so picky, we finally got him eating fish but it's always breaded, now he won't be able to have breaded fish, so not sure what to do.. unless we can find a good gluten free type of breading... he is a typical kid, mac and cheese, pizza and bread anything! he did try celery for the 1st time today,lol didn't like it.. wouldn't try anything on it either, so no wonder,lol... but this is going to be SO HARD!0

I eat vegan and grain free with multiple other allergies, and I can still manage pizza, pancakes, tacos, muffins, etc. I don't do pasta a lot, but there are plenty of choices around for rice, corn, or quinoa based noodles. There are lots of gluten-free cookbooks and blogs that have a kid-friendly focus.

(You can play with this recipe in all different ways - add choc chips, raisins, nuts, seeds, etc. - swap out the pumpkin puree for mashed bananas, applesauce, grated zucchini, etc. Infinite varieties.)0 -
