Basil and Parmesian Pesto
Blend c.25 basil leaves
3.5fl oz extra virgin olive oil
1.5oz pine nuts in a blender (I always add a clove of garlic too even though it's not in the recipe)
Then add 1oz grated parmesan and 1oz grated pecorino cheese (I just use 2oz Parmesan) and blend again.
That's it basically. I decided to make it today and discovered I had no pine nuts so I decided to use flaked almonds. They are nearly the same calorie wise. I like to leave the pesto sit for a while before eating it so will let you know how the almonds work out. Last time I used really great quality parmesan and it was amazing...todays is cheaper stuff so I imagine may not be as good. I leave out the salt as I always think Parmesan is salty enough. Enjoy : )
