4th week

I am going into my 4th week in the vegan world. Being raised in Atlanta I grew up on pot roast, fried chicken and bbque etc. and my dad used to tell me I must have been kin to a rat with all the cheese I ate. After having stomach surgery 15 years ago eating beef was completely out and about all the meat I would eat was limited chicken and ribs once in a while. Catfish was the only fish my stomach would tolerate. We lived in Lake Charles, La for 20 years so I have eaten my fair share of crawfish and shrimp.
Over the past few years I have eaten tofu more often and tried to get more veggies and fruits into the diet. The decision to go vegan was something I thought long and hard about since cheese and butter are 2 of my loves! But I have found vegan butter and sour cream that actually tastes better then the real so that makes it a bit easier.
I have learned though if I am going out to eat with family and it's a place where I really can't eat what they offer I just take a hummus and tomato sandwich or a peanut butter sandwich and I'm good to go! As I have to have veggies over cooked to digest, it's sometimes hard to make a place understand when I say soft I really mean soft! We went to Figo last week and I just took some cooked tofu with me and got dry angel hair and again was good to go!
It really has been much easier than I thought it would. We are going to Louisiana in Oct for a visit and I will eat a few crawfish and NOT feel guilty at all.

I grew up in New Iberia and now live outside of Lake Charles, so I know how hard it is to eat a plant based diet in this environment, and I SO LOVE crawfish and shrimp myself! Enjoy your trip!0
