Turkey with Asparagus for Low Carb Days

Here's a delicious meal that's easy to make and delicious for low carb days. It's also easy to pack to take to work. I just add the frozen asparagus on top of the turkey in the container in the morning and microwave them together when it's time to eat I also save a portion of the turkey for the high carb days. I add 1/4 cup of corn and black beans and top my serving with non-fat, plain greek yogurt - tastes just like sour cream.
Ingredients:
Ground Turkey - 1 lb
Fire roasted crushed tomatoes - 1 can (optional)
Lawry's Chicken Taco Seasoning - 1/2 package
Trader Joe's Frozen Grilled Asparagus Spears - 12 spears cut into thirds.
Trader Joe's - Fresh Packed Mild Salsa (optional)
Brown the turkey, add the tomatoes and taco seasoning. I also add poultry seasoning, paprika, onion powder and a teaspoon of unsweetened cocoa which gives it a rich flavor. Add small amount of water if desired - depending on desired consistency. Simmer about 15 minutes. If eating immediately after cooking, heat asparagus, cut into thirds and add to turkey serving. To my serving of turkey, I also add 1/4 cup salsa and top with non-fat plain yogurt.
