    Do you like tuna but need a fresh way to prepare it? Here's my take on tuna patties on a bed of spinach:

    Easy Clean Tuna Patties:

    3 cans tuna - 2 of the light, 1 white albacore
    1 whole egg, beaten
    2 tablespoons of ground flaxseed
    your choice of spices- I did onion powder, smoked paprika, and cayenne

    Mix together and make into 5 round, thin patties then dip each side into more ground flaxseed for a "crust"
    Over medium heat in a skillet, spray non-stick spray and grilled each side turning a couple times, about 8-10 minutes total

    Serve on a bed of spinach sprayed with lite balsamic dressing
    Optional- make a tarter sauce with sugar free relish, low cal mayo, horseradish sauce
    OR slice a lemon and squeeze over the tuna patties
