Hola Challengers!
How are we all doing this mighty fine tuesday? Did you get some veggies in yesterday?? Remember, try to shoot for 2-3 servings!
Yesterday I packed todays snacks and stuff ahead of time so I can't change my mind lol broccoli, celery and carrots for me! It's good to ave protein with snacks like this as well so cheese with my broccoli, hummus with my carrots and my fave! peanut butter with my celery! I am also going to make a fresh batch of kale chips! Which today being recipe day I am going to share with you!
Now like I have said before, I am not a veggie person at all! It's not that I don't like the taste its just I don't normally crave veggies. Until I had kale chips! Salt and vinegar chips were one of my weaknesses before I started eating healthy. Sometimes you just need that salty crunch for a snack! Trust me, it sounds weird but I am the last person to share something just because its good for you. I'm sharing it because it's tasty AND good for you :happy:
So here's what you need:
-2-3 bunches of kale (washed and dried thoroughly)
-2-3 tablespoons of white distilled vinegar (depending on how vinegar-y you like em)
-sea salt and other seasonings to taste
-2 tablespoons of extra virgin olive oil
Preheat oven to 325 degrees
Combine olive oil, vinegar, ad seasonings in a bowl.
Remove kale leaves from stems and massage the mixture over them until fully coated.
Bake for 20-25 minutes making sure to flip them every 10 minutes or so.
Remove and Enjoy!
You can do this without the vinegar also if you are not a vinegar person. just add more olive oil and season to your tastes!

Those sound great!! I get cravings for salty treats ALL THE TIME!! I will definitely have to give those a try!
The recipe I am sharing is for a Healthy Pumpkin Pie Smoothie!
1/2 banana (peeled, frozen, diced)
1/3 cup pumpkin puree (Libby’s)
1/3 cup FF plain Greek yogurt
3/4-1cup vanilla almond milk
Few shakes of pumpkin spice (Cinnamon, ginger, nutmeg, and allspice)
Few shakes of cinnamon (optional)
Pinch of cloves
1tsp vanilla
4-5 ice cubes
Put in blender and there you go!! So yummy for this time of year!!!0 -
Ok, I'm posting a recipe that I found somewhere on this site, or another weightloss blog or something... but it's so yummy I can't not share!
Pumpkin muffins
5 large eggs
1 cup pure pumpkin
1 tsp vanilla
1 tsp cinnamon
1/2 cup splenda
1 - 8 oz container of low fat cream cheese
Mix all together and back at 350 degrees for 35 min. Can also make into a cake, if so bake closer to 40 min. Can check with a toothpick to make sure it's done.
