Chipotle-Glazed Roast Chicken with Sweet Potatoes
Makes: 6 servings
Prep time: 15 minutes
Cook time: 35 minutes
Ingredients
4 sweet potatoes (10 ounces each), peeled and cut into 1-inch pieces
2 1/2 tablespoons olive oil
4 chipotle chilies in adobo sauce, minced
2 garlic cloves, minced
2 tablespoons honey
2 teaspoons cider vinegar
1 1/4 teaspoons salt, plus additional to taste
1 teaspoon cumin
1/2 teaspoon cinnamon
6 boneless, skinless chicken breasts (2 pounds), rinsed and patted dry
Chopped cilantro, for garnish (optional)
Directions
1. Preheat the oven to 400 degrees. In a medium bowl, toss the sweet potatoes in the olive oil and scatter on the bottom of a roasting pan. Roast for 15 minutes.
2. In a small bowl, mix together the chilies, garlic, honey, vinegar, salt, cumin, and cinnamon to make a paste. Rub the paste evenly over each breast.
3. Place the chicken breasts on top of the sweet potatoes and roast until the chicken is just cooked through, about 25 to 30 minutes. Serve garnished with cilantro if desired.

STEAK AND STILTON SANDWICH WITH LOW FAT CHIPS
Serves 4
Prep time: 10 minutes Cook time: 30 minutes
INGREDIENTS
for the chips:
2 Baking potatoes
1/2 tbsp Olive oil
for the sandwich:
2 tbsp Olive oil
1 Large red onion, finely sliced
Salt and pepper
2 200g Sirloin or rump steaks
4 Mini ciabatta rolls
2 tsp English mustard
100g Watercress
100g Stilton
Tomato ketchup, or your favourite sauce, to serve
METHOD
Preheat the oven to 200C/400F/gas 6. Leave the skin on the potatoes and cut them into 1cm thick chips. Put them on a non stick baking tray and toss int he olive oil. Place the tray in the oven and cook the chips for 20-25 minutes, or until golden and crispy.
Meanwhile, heat the olive oil in a frying pan, add the onion and season with salt and pepper. Cook on a medium heat for 10-15 minutes until caramelised.
Heat a griddle pan until it starts to smoke. Season the steaks well with salt and pepper and brush each with a little oil. Chargrill for 2-3 minutes each side for rare, 3-4 minutes for medium, 4-5 minutes for well done (depending on the steak's thickness). Leave the steaks to rest for 10 minutes.
Slice the rolls in half horizontally and lay them on the griddle pan cut side down for 1 minute. Once they are slightly charred, drizzle with a little olive oil.
Cut the meat into 1cm thick slices. Spread each roll with mustard, then add the watercress, steak, stilton and onions. Season the chips and serve them with the steak sandwich and a dollop of your favourite sauce on the side!0
