Yellow Lentil(Split Pea) Soup

I wanted to make this recipe and picked up supposed yellow lentils but checked the bag and they were actually yellow split peas. As usual, I adapted the recipe to what I have around the house.

1.5 cups of yellow split peas
cup of grape tomatoes, cut in half and seeded
1 large russet, 1 inch slices
1 medium carrot, cut half length wise and in half width wise
1 T olive oil
1 onion
4 cups of homemade veggie stock
salt as needed
Rinse split peas and put in a large sauce pan with 2 inches of water(covering the lentils), add tomatoes, potato, and carrot. Bring to boil and simmer for 30 minutes, I forgot to cover it but you should.
Strain, saving the cooking liquid, Transfer to blender and blend, use the cooking liquid to blend and make it smooth.
I'm a texture *kitten* so I left some peas whole and pureed the rest. I also ended up using all the liquid.
Saute the onions in the oil and add them to the pureed peas and stock in a medium pot. Simmer until it thickens, about 10 minutes.
serve with baked pita chips and some sea salt, just put the pita in the oven at 375 for 7 minutes.
