Coconut flour?

Anyone use coconut flour? How well does it work in recipes?? I'm nervous to try it as I despise the flavor of coconut, lol. But, I really need to switch up my flours! I usually use a combo of rice, potato and tapioca, but its so starchy.

I usually split it part coconut, part almond flours, but I don't know if you can use almond? (due to other food allergies) But that helps cut down on the coconut taste, which really isn't too bad. Plus I think coconut flour is more expensive, so it cuts down the cost a little bit? But the almond flour can sometimes give me heartburn, lol.
I've never used it as a sub for a recipe calling for another flour, so I don't know how well it translates. The times I've used it, the recipe was already written to use coconut flour.0 -
I love coconut flour, it's naturally sweet and is excellent for baking sweets. It is rather heavy, but when substituted properly it's the best.0

I've used coconut flour mixed with almond flour for my low carb cheesecake recipe & it helped a lot. The 1st 2 x's I made the cheesecake with just almond flour and the results were a lil soggy. When I mixed in the coconut flour it aborbed the excess moisture making it a perfect cookie like crust. I also tried cocnut flour in salmon cakes but that didn't work out as they were too dry. Note in point use it spariingly cause it sucks up all the moisture in certain recipes. Hope this helped :flowerforyou:0

Maybe you can try Bruce Fife's book, "Cooking with Coconut Flour." I found it at my local library and tried a few recipes to see if I would like any of them. I ended up buying a copy. So now I can switch up with almond flour recipes. Oh, there are a lot of eggs used in the recipes, just an fyi for people with egg sensitivities.0 -

I've used oats (if you can have those) in salmon cakes. I did put them in a food processor first so they were finer.
