New dessert idea--can you say pumpkin cheesecake?

So I just recently found ff/sf Jello pudding mix, instant, in cheesecake flavor. The first time, we made it w/2% milk and added blackberries from our co-op produce basket. The second time, we made it with almond milk and added raspberries from the grocery store. Tonight, I'm gonna make it with the almond milk, swirl in some canned pumpkin (not the pie mix kind, but just the pumpkin) and pumpkin pie spice. Crossing my fingers I get something that resembles a "skinny" pumpkin cheesecake. I think I have some gingersnap crumbs around here somewhere. They are great instead of a graham cracker crust...just sprinkle a few on the top of the fakey cakey. I'll update my results tomorrow.

    Saw this a while back and have already purchased the supplies for Thanksgiving dessert :)

    Little bit late telling the results for this. Still out of town for the craft show we had this weekend and the computer at the previous hotel was a little tricky. Our room was not in range for the router, so I had to wander closer to the office and sit in the chilly air outside to log in, etc. At a different hotel this evening before heading home tomorrow morning.

    The great pumpkin cheesefake was AWESOME! I made it with almond milk, the ff sf jellow cheesecake pudding mix. The pudding doesn't set up qite as firm as with milk, but a lot less calories. Then we just stirred in 1/4 cup of the canned pumpkin and some pumpkin pie spice sprinkled on top-generous amount for me, add to taste. We'll def do this one again. Just as soon as I recuperate from Robert's b-day dinner at Red Robin. A whole day's food in one meal. Glad we don't eat that way every day anymore. Other than that, we ate really well on our trip out of town. Healthy sandwiches. Grilled chicken. Fruit. Veg. Cous cous.No junk until today, except the popcorn holes (the microwave made holes in the mini bags of popcorn when it tried to cook them, and they never popped, just smoked and got holey)
