So, I just made these and they are really yummy! One of these days, I'll figure out how to take pics and post them, but for now, here's the basic how-to:
Ingredients:
Deli ham slices (I used prepackaged Kroger honey ham)
6 eggs
salt/pepper to taste
1Tbsp Red Hot sauce (optional)
Chives
2% cheddar cheese (again, I used Kroger brand)
Lightly spray a muffin tin and preheat your oven to 350 degrees.
Line each muffin tin with one slice of ham and bake for 10 minutes.
Beat eggs with hot sauce, salt and pepper. Fill each ham cup with egg mixture. Bake an additional 8-10 minutes until egg is firm. Top with cheese and chives. Enjoy.
Each muffin has: Calories: 134, fat 9, carbs 2, protein 10, sodium (with hot sauce) 396

I have a hard time getting my daughter to find something to eat for breakfast. She likes hot sauce maybe these will do the trick. Thanks for sharing.0
