Syn Free Carrot and Ginger Soup

I have just made this soup and it was delicious. I am certainly going to make it again, very filling and being syn free you can eat as much as you like.
Serves about 4
1 Onion, peeled and chopped
2 celery sticks chopped
2 garlic cloves, chopped
1 lb carrots, peeled and chopped
1 cm fresh ginger root, peeled and finely grated
1 3/4 pint chicken stock
Salt and pepper.
Fry the onion, celery, garlic and ginger in fry light for about 3 mins. Add the stock and carrots and bring to the boil. Simmer for approx 20 mins or until the carrots are tender. Using a stick blender or food processor, blend the soup until smooth. Season to taste with salt and pepper..........Serve and enjoy
