Sweet Potato Recipes??

I'm looking for a delicious sweet potato recipe. Thanksgiving is at our house this year for the first time ever. Does anyone care to share how you prepare sweet potatoes?

    I think I prepare mine in a fairly traditional fashion:

    1) Boil the sweet potatoes until 90 percent cooked
    2) Remove from the water and let them cool until they are able to be handled
    3) Peel the skins off (they pretty much just fall off at this point)
    4) Cut them into pieces roughly the size of lemons and place those pieces in a baking dish
    5) Place several pats of 'butter' (you can use real or the I can't belive its not stuff) over the top. Not all have to have butter on them
    6) Sprinkle brown sugar over the top of the Sweet Potatoes (I use Splenda Brown Sugar)
    7) Bake in the oven for about 20-30 minutes

    That's all folks! This is how we have done it since I was a kid. :flowerforyou:

    That's pretty much the same way my mom always makes them too. This year she passed the torch to us. I thought I might try something different. I just don't know what. :smile:

    My step mom (whom I adore) mashes hers with butter and brown sugar. Those are also super tasty! lol

    This is on old-timey recipe from my Great-great grandma. Enjoy!

    Candied Sweet Potatoes:

    Boil potatoes until nearly done. Peal and cut in half. Place in buttered pan. (or spray w/Pam) Use real maple syrup and pour over potatoes and bake slowly 45 min at 350 degrees. Baste with syrup frequently. Top with chopped or whole pecans.


    Another variation: (recipe is per 6 large sweet potatoes)

    Boil potatoes until jackets soft, remove skins, mash smooth, adding 2 tb butter (your fav. low-cal), speck nutmeg, allspice and cinnamon, and chopped nut meats (walnut, pecans) Form into balls, roll in flour and fry in hot peanut oil. Serve.

    Well this is one way we do them in my house and I don't know if it's really for Thanksgiving or not but we take several sweet potatoes and cut them into chunks. I make a mix of olive oil, minced garlic (kind in the jar), shredded parm cheese, italian seasoning and a dash of salt and pepper. I wish I could give you amounts but I just eyeball it. I pour the mix over the potatoes and coat well and bake it 350. I have stayed away from this lately but when I do make it the reduced fat parm is just as good!

    I always HATED sweet potatoes cooked the traditional way for Thanksgiving...soggy canned sweet potatoes, brown sugar, marshmallows...ICK!

    We got some in our produce co-op basket, so I had to find a way to cook them that I could actually stand to eat. I've found that the aromatic spices, such as the kind used in Indian or Moroccan dishes, make them amazing. Tonight, we had sweets for dinner. I peeled. cut them into chunks put them into large individual size baking dishes coated with Pam, then sprinkled over some cumin, some 5-spice powder, some ground chipotle and a little bit of kosher salt. Sprayed a little more Pam over the top, mixed it all together, covered with foil and baked at 350 until done, about 30-45 minutes.

    You can also cube and boil them, then mash and add the same spices. Or bake whole sweets then serve them like a regular baked potato, same spices as my baked chunks. Allspice, cinnamon, coriander, cardamom, garam masala, ras al hanout. Any of the aromatics are great and different than the goops sticky stuff my mom used to make when I was a kid.

    I made some the other day roasted with a bit of broth and fresh rosemary. Very delicious

    Yum this sounds good! I have only had sweet potatoes with butter, salt and pepper on them. I'm thinking though I best stick to my method - less calories! Sounds like a wonderful dessert though :smile:
