I just made this yesterday.
Crock Pot Black Bean Chili
1 lb. ground turkey breast or extra lean ground beef
1 large onion - finely chopped
2 fresh garlic cloves, minced
1 can (15oz) black beans - rinsed and drained
1 large can (29 oz) diced tomatoes
2 tbls tomato paste
2 Cups water
3 peppers diced: one red, one green, one yellow
7 oz diced green chilies
1 tbls. chili powder
1 tsp. ground cumin
1 tsp. salt
1 tsp. black pepper
In a nonstick skillet over medium heat, cook ground meat and garlic until meat is no longer pink; drain. Transfer meat to crockpot. Add remaining ingredients and stir until combined. Cook on high for 4 hours.
I figured my calories for eight servings and using 93/7 turkey breast = 181 Calories.
Edited to add protein = 19, fat = 60 -
Vegetarian Chilli
1 cup chopped onion
1 cup chopped red bell peppers
1 cup chopped zucchini
8 oz chopped white mushrooms
3 cloves of garlic ( minced)
1 can crushed tomatoes
1 can mixed beans ( next time I will try with Black beans)
1 can chickpeas
1 tbs Agava
1 tbs dry basil
1 tbs dry oregano
Salt to taste
Spices (grind in a spice processor)
1 whole dried Chile Ancho
1 whole dried Chile California
½ jalapeno pepper ( dry)
½ tbs Mexican Chilli powder
1 tsp cumin
5-7 black pepper corns
Add all the ingredients in the crock pot and cook on high for 2 hour and then 4-5 on low.
Makes 4 big servings --> Approximately: Cals: 356; Carb: 59.1; Protein: 20.5; Fat: 5.10
