    Mandarin Dory Spinach Salad

    Salad WIth Muscle .Great to eat on Weight training days!



    Ready in 30minutes : Makes 2 Servings.

    2 Tblsp Extra virgin Olive Oil
    1/2 cup slices ALmonds
    1 Mandarin Orange halved. Unpeeled
    1 Tblsp White Vinegar
    2 Stalks Celery,chopped
    6 oz White dory
    Red pepper flakes
    2cups Baby Spinach
    2 cups Mixed Greens
    Sea salt and ground pepper,to taste


    METHOD
    1. Heat Oil in skillet and brown almonds over medium heat about 5minutes.

    2. Squeeze juice from the orange halves into a small bowl.

    3. Add orange juice and vinegar to skillet.Stir in chopped celery and almonds and Parsley . Mis all ingredients together and remove from pan ; leave the heat on.

    4.Brush dory fillets with olive oli and sprinkle wit red pepper flakes.Brown on both sides,about 2-3 minutes per side .

    5.Combine Spinach and mixed greens in a large mixing bowl. Add the cooked fish and pour almond mixture overtop. Garnish with extra orange slices and season to taste.
