Hey... nothing like planning at the last minute.

I'm planning to make the real mashed potatoes for my family.... but wanted to try to make some of the fake out ones for me.

Who knows that cauliflower recipe? By the way, I have no blender, and I can't find the beaters for my hand mixer.... I do have a small cuisinart food processor though.

    Oooo, ooo, me, me, me.... I've got one! Let me go find it for you. Do you have a good immersion blender or can you borrow one? That's what I use to process mine and it's terrific! Back in a minute....

    Another Mock Mashed Potatoes (mashed Cauliflower) - Low Carb

    Ingredients:

    1 head fresh cauliflower, rinsed, florets only
    Water as needed
    1 teaspoon fresh garlic, minced or 2 cloves roasted garlic, mashed, to taste
    1 teaspoon fresh rosemary, to taste, minced (optional)
    1 tablespoon whipped cream cheese
    1/4 c parmesan cheese, grated
    1/8 tsp chicken bouillon powder
    1/8 - 1/4 tsp low sodium salt or regular salt to taste (I used my own homemade seasoned salt blend made with kosher salt flakes)
    1/8 tsp black pepper, to taste
    1 Tbsp Smart Balance Butter Subsitute or unsalted butter, to taste

    Directions:
    1. bring a medium-large pot of water to a boil.
    2. Cut cauliflower into smaller pieces, add to the pot, and boil until fork tender, approximately 6 minutes; drain well.
    3. Using a stick (immersion) blender or potato masher, mash the cauliflower with the cream cheese, garlic, rosemary, parmesan cheese, butter, and bouillon powder.
    4. Add some salt and pepper to taste - test and adjust seasonings as needed.


    I believe I didn't actually boil my cauliflower, but used a steamer insert to cook it? It's been a few weeks since I made this last. I also recommend the immersion blender or a food processor of some kind. A potato masher is likely to create wildly uneven texture that reduces the likeness to mashed potatoes. A co-worker has tried a mock mashed potatoes recipe before and hated it. Her primary complaint was the texture and therefore uneven taste. Well and smoothly blended is best!

    FYI, the time I built this as a recipe in MFP I had about 600g of raw cauliflower and I used the light cream cheese (neufchatel). At 4 servings the portions calculated to 124 calories each, but I have forgotten the serving volume. I *think* it was 2/3 - 3/4 of a cup, but I could be so wrong. We later learned to put the measured serving size in the title of each recipe we build.
