New to group - not sure where to start

Hi everyone! I have recently been diagnosed with Hashimoto's Disease and along with my other health issues, my Dr. suggested that a gluten free AND low carb "diet" may be the way to go. I am waiting to meet with a nutritionist that he recommended but in the mean time, I am not really sure where to start. I will say that I have found gluten in more foods than I ever would have imagined and I am sort of discouraged. By low carb, he meant healthy carbs - fruits, veggies, etc. I have been on a low carb diet for awhile now and have had good results but still feel bad when I eat too many "low carb, high fiber" treats. I LOVE tortillas!!! I found wonderful GF tortillas and I found wonderful Low Carb tortillas but have yet to find a GF/LC tortilla! LOL!
This past weekend I threw caution to the wind and ate whatever I wanted - cake, bread, crackers, etc. By Sunday afternoon I was in so much pain it wasnt even funny.
Anyway, just wanted to introduce myself and maybe get some pointers on where to find good GF products, how to manage the diet, etc. Thanks!

    Try a search for paleo tortilla recipes, or use a lettuce or other green wrap. Another option would be something based on a dosa or crepe recipe. Crepe is mostly eggs, plus whatever flour you please (feel free to start with just a regular crepe recipe and sub your favourite whole flour, including a bean/pea/lentil flour), so that would be high protein/low carb. You might have to roll and cut it on your plate, eat with a knife and fork instead of picking it up and using your fingers, but it should work.

    My mom has Hashimotos and is on a similar diet. She primarily eats meat, fish, eggs, nuts, dairy, veggies, and fruit. The only real starchy thing that she has are sweet potatoes. It's not an easy transition, but once you get used to it's not too bad.

    I've seen people mention these quite a bit, if you don't feel like making your own. They are a wrap made from coconut. They are gluten free and pretty low carb. I haven't tried them yet, but want to....though they are pricey.
