Zucchini Fritters

Today is National Fritter Day.
Normally, when I think of fritters, I think of fried apple fritters.
I wanted a healthier, savory version since I don't like fried sweet items.

They are creamy on the inside and crispy on the outside. They were amazing. The only thing I'd do was play with the temperature. I think 425 was too high. Maybe 375 for 30 minutes.
I also made 2 flax "eggs" instead of 2 of the Ener-G replacement eggs.
